Remove options after they have been selected

On a multiple use subform I want a picklist to remove any previously selected options. I swear I have seen this somewhere before but for the life of me I cannot find any reference to it in the community or Knowledge-base. If there is something already out there just point me in the right direction otherwise HELP!

  In the webinar I build a subform with a PickList. After choosing the option, the next subform record is opened and the previous selection(s) will not be shown. This is different than removing it from the server option list, the dwindling is only done on a "per-parent-record" basis. So when the next parent record is opened, the subform will have the full set of PickList options.
